Chipotle Chicken Burrito

Chipotle Chicken, Fajita Veggies, Cilantro-Lime Rice, and Black Beans

Equipment

  • Grill Pan
  • Ziploc bag
  • Small food processor

Ingredients

  • 4 Chicken Breasts
  • 2 Small Cans of Embasa Chipotle Peppers
  • 1 tbsp Cumin
  • 2 tbsp Oregano
  • 1/2 cup Water
  • 1 tbsp Honey
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • Fresh groudned pepper

Instructions

  • Marinade Instructions
    Blend all the the marinade ingredients in the food processor until everything is blended well.
    Put the marinade and the chicken in the ziploc bag and let it marinate in the fridge for at least 1 hour (overnight would be best)
  • Cooking Instructions
    Add a little non-stick cooking spray to Grill Pan and preheat it on Medium High heat. You want it to be really hot because you want to char grill marks into the chicken.
    Place chicken on the grill pan, let it sear/char well before turning it, and cook until almost done.
    Reduce heat to medium and Remove the chicken to a plate, cut into small chunks and place back into the pan. Cook a little longer until the chicken is completely done.
    Wrap all the done chicken tightly in foil and let it sit for at least 10 minutes before eating. Tip: Cook the fajita veggies in this pan while it's still hot for better flavor.
  • Fajita Veggies
    1 Red Onion, sliced into strips
    1 Green Pepper (red is tasty too!), sliced into strips
    1 Tsp of Dried Oregano
    Canola Spray
    Cooking Instructions
    Place veggies and oregano in very hot pan and spray with a little canola oil.
    Saute until done, but the veggies should still be 'crispy'
  • Cilantro-Lime Rice
    (2) – 2 Cup bags of Uncle Ben's Whole Grain Boil-in-Bag Rice [a box has 4 bags in it]
    Juice from 1 Lime
    1 – small bunch of fresh cilantro (stems removed, leafs finely chopped)
    1 1/2 Tbsp of butter
    Kosher Salt (or sea salt)
    Cooking Instructions
    Cook rice according to instructions and mix well with other ingredients (soften the butter a little bit to make mixing easier).
    Add salt to taste
  • Black Beans
    1 can of Black Beans (undrained)
    2 tsp of cumin
    1 tsp of oregano
    1 tsp of kosher salt
    Cooking Instructions
    Mix all the ingredients in a small sauce pan and heat thoroughly.
